    Ribs, Ribs and More Ribs...

Well, July 4th was too busy for me to do anything for myself other than some burgers, brats and hot dogs. I did a drop-off catering gig for 60 people and then I was traveling all over Indiana picking up my girls from their various summer jobs so they could be home this weekend, and then, we...

    Here Comes The Judge!

Today I took the oath of the Certified Barbecue Judge for the KCBS! The class was great and was taught by Mike Lake, the president of the KCBS Board. He is an extremely nice, knowledgeable and talented gentleman; not to mention - a BBQ legend in the KCBS. I had a really great time and I...

    Smoke Wood...

I have been using the wood chunks that walmart sells. Does anyone else use "store bought" wood or do you order online or perhaps cure your own? I am asking because I have a suspicion that the wally world stuff may be "green" wood and causing heavy creosote build-up in my smokers.

    My First Shoulder Picnic Cook!

I smoked a 12lb. picnic and a bunch of wings (hot garlic buffalo wings). The picnic got done in 19 hours but that was because I cooked it at 225* the whole time. Not a problem - I had plenty of beer! I used Royal Oak in the WSM and it turned out great! Here is a pic of the pulled pork and a...

I got word today from a friend at work that there was a new restaurant on our side of town that has become the rave! Its called "Just Barbecue". So, I told him that I would check it out this evening since I would have some time to kill. I went to joint, and there were two giant barrel grills...

    Royal Oak Redemption!

Yesterday I was furious and bummed out because me Q came out with no smoke rings at all. I used Royal Oak lump for the cook and I instantly blamed it for my lack of a smoke-ringed product. Here is a link to what I call my Sorry-Q!. Today, I thought I would give Royal Oak another chance and...
