    April brisket

    Oh boy it is such a beautiful day. This cook started 5:00pm, Saturday. WSM has been running for about an hour empty @ 225 when a $1.97/lb Walmart brisket seasoned with SPOG went in fat cap up. Using 15# of KBB and nectarine smoking wood (I got for Christmas). Center Minion method started with...

    Something my wife wanted

    The dog wakes my wife up at night wanting on and off the bed which is to tall for her to be able to jump. This is what I came up with. Dog ramp by chashint1, on Flickr\}

    Sunday ribs on the Genesis

    Since it looks like it could rain at any time I didn't want to use the WSM so I went back to my old method of smoking a rack of babybacks on the Genesis. These will get wrapped in about one more hour. Ribs on the Genesis by chashint1, on Flickr\} Sunday ribs 2 by chashint1, on Flickr\}

    Trying out the new BBQ cart

    This is the first cook since I built the BBQ cart. I really like being able to easily move everything from the storage position to the cooking position. The work surface and the lid hook really make a big difference too. New wheels and lid hook by chashint1, on Flickr\} Started with this...

    First hotnfast brisket

    Well, today around 10am my wife decided she wanted BBQ for dinner. I figured we would get some take out. Nope, she wanted home cooking. So I filled up a chimney and got it going and loaded the WSM with charcoal. It figures the first time (yes first time) I had not scrubbed the grate following a...

    A little brisket

    A couple months ago I picked up a couple of packer briskets. One was 13lbs and the other one was only 8lbs. Earlier in the week my wife told me it was time for some more BBQ so I put the little one in the fridge to thaw. I intended to try a hot-n-fast cook but around 8:00 last night I decided to...

    Playoff brisket

    My brother gave it two thumbs up. Cooked overnight in the WSM, started 5:00pm, fought rain throughout the night, ran out of charcoal at 7:00am, with brisket at 169 IT, wrapped and transferred to oven @ 250 degrees, probed tender around 9:00am, rested in cooler till we sliced at 11:30. Brisket...

    First cook in the rain

    Saturday started out cold (35), overcast, calm. The plan was to cook a small pork shoulder roast and piggy back smoked pecans in the same cook when the pork was wrapped in foil. The pork and pecans turned out great. There was a brisket seasoned with SPOG waiting to go on when the pork and pecans...

    Ash pan for 22" WSM ?

    Has anyone found a sturdy pan that will nest into the bottom of a 22" WSM to use as an ash catcher? I am thinking about putting the WSM in a rolling cart and considering anchoring the legs to it. The ECB replacement bowls are too tall, as is the WSM water pan.

    Brisket practice

    I am cooking another brisket mostly to practice for my in-laws anniversary party next Saturday. Since I had good results with the first brisket in the WSM I should probably try to duplicate that cook, but where's the fun in that? The changes for this one are minor but some people are adamant...
