Trying out the new BBQ cart

This is the first cook since I built the BBQ cart.
I really like being able to easily move everything from the storage position to the cooking position.
The work surface and the lid hook really make a big difference too.

Loaded the WSM with 15# of charcoal and the wood chunks.
I started the fire with one starter cube in the middle around 6PM.
The fire burned unrestricted for about 30 minutes and then I assembled the WSM with all vents open 100%.
Around 7:30 the WSM was running around 220 degrees.
Threw the brisket on and set the intake vents to the normal cooking positions.
It is 9PM and the WSM is running at 244 degrees, the meat probe is 135 degrees.
If things work like they usually do the WSM should run steady through the night.
 
Awesome cart. What a craftsman. Looks like a great break in cook. Brisket looks fantastic. Will check back for end result.

Thanks for the kind words.

I have changed my cooking temperature from 220ish to 250ish and that really knocks a lot of time off the cook.
The brisket is already in the cooler resting.
 
Cart with storage and wheels and a work surface, doesn't get much better. Bet you will get a lot of use out of that setup.
 
Very nice job on the cart. I would like to have that skill. Looking forward to the brisket, one of our favorite meals.

Thanks again for all the compliments on my BBQ cart.
It sorta took on a life of its own as I was building it.
I really like it a lot.

The meal was supposed to be served at noon.
Through a series of airline screw ups my wife didn't get home until close to 4 so everything was essentially leftovers by the time it was served.
The brisket was ok but not as moist as I like it to be.
It will make great brisket tacos though.
The beans and potatoes held up to the extended hold really well.
 
well , im late to the party , but i'll say the cart is a work of art and the brisket n beans look really good. nice work , brother.
 
That's a fine cart, nicely done! That brisket is da' the bomb
