Pastrami Reuben smoked in a rib rack

I picked up a point the previous week, carved it up into three slabs. I cured it for a week, rinsed it up good, put on the rub, and then into the rib back

Onto the smoker

Needed a snack while it was cooking, so I added some Spam to the WSM

After about six hours I hit an IT of 165 and pulled it from the smoker, wrapped it tightly in foil and wrapped in a blanket for a couple hours

After the rest, I put in zip locks and kept it in the fridge until Sunday

Started slicing it up around noon Sunday

It was amazing, I love Pastrami Reuben Sandwiches. This was my second time to do this, it won't be my last. I really think the point is better for Reubens than the flat, there's more marbling in the point, and that makes for wonder full Pastrami. I documented this more detailed if anyone else gets a craving, it's pure goodness if I don't say so myself. The Reubens were gone before half time, I did get a full Sammy, but not a picture of it, just my cheater Sammy which was as good if not...

Dunno Chuck.... I can't see your pic's, just little black x's on both this post and on your attached link. Looks like everyone else could see. Maybe it's on my end but I can see pic's on the other posts made by others over the weekend just fine. Anyway, sounds great.

Are you guys using Firefox? I couldn't see any pictures using Firefox, so I went back to Explorer for this forum, and I can see pictures using it. I hear that Chrome also displays photos on this forum. For whatever reason, Firefox doesn't, at least version 51.0.1

When I copy the pic address to a new browser tab I get the following error:
This site can’t be reached

s3.photobucket.com took too long to respond.

That's weird. I can see them in Explorer and in Chrome, but not Firefox. I'm sure photobucket is partly to blame, if not fully

The pastrami looks spot on as does your sammie. I will take a order of both, please. Do you ship overnight?
 
Forget the 'strami. Questions, questions. What IT did you go to for the SPAM? Did you need to crutch it to bump it out of the stall, or did you let it ride? Did it pull well? Looks like a complex flavour profile & tricky cook. Outstanding! ;)

Great looking Pastrami, I've never done it from scratch. Always started with corned beef. I see some nice looking thick sliced bacon in that bag!
