Chef's Table: BBQ on Netflix, Coming 9/2/20


 
Glad I stumbled upon this. Premiers tomorrow. I've spent a lot of time on Netflix and Hulu this past six months. I'll check this out!
 
Tootsie is quite the character. I’ve been to City Meat Market, but haven’t made it to Snows. Next trip to visit my sister after this covid crap is over.

The Lennox Hastie episode blew me away. He’s like Adam Perry Lang on steroids. He is so single minded; I wonder what his obsession has cost him.
 
Agree. I watched episode 1 and really liked it. I was thinking about building a pit where I can cook over live coals like Tootsie does. Has anyone done that?
 
I watched a good portion of the Tootsie segment before the sandman came to visit.
It's the first Chef's Table series I've seen so far. The photography is great and Tootsie's story should be interesting to just about everyone, not just bbq nuts like us.
 
I watched them all last night. Tootsie and Rodney Scott were my favorites.
There are only 4 episodes, which left me wanting more.

Chud makes ones . No reason why a WSM without the water pan would not do the same, I've done pork steak that way. Only diff is Tootsie uses real wood coals from another pit that burns down the wood.

 
I did some chicken using her mop sauce recipe and without the water pan with lump charcoal to simulate the effect. Not sure if the lump matters vs. briquettes. I basically did a hybrid of Chris's recipe and Tootsies. It was good. I really wanna do some pork steak that way.
 
"I guess it's just an instinct." I loved that perspective. For how I'm wired, the beat of that first episode fits perfectly with my personal taste. I can see myself sitting alone in the basement for several hours while watching a couple episodes, enjoying a few cold ones, and watching through the walkout doors some gentle, bluish smoke ascending. In my work, I interact with folks frequently--which I enjoy--but that's also the reason why I appreciate being alone sometimes.
