    High temp brisket question

    Well the post made me go ahead and try it.... Major success. Did it on my 22.5 WSM it was done around 4 hours. Great smoke ring / flavor and bark was nice too. When low and slowing it I do 2/3 pork butts over the brisket. Usually some hot links and finsih Barbies beans in it too...

    Good to know. Also important to look at in terms of the entire price. Ususally $30-$50 extra. The fact that it is included makes it understandable how they priced the new units.

    Roadside Chicken

    When using the bottle I did the grate spin on the kettle. Two-zone set of coals. Spin the grate so chicken is off the coals and use the bottle and spin the grate again and get 'em back over. Worked well.

    My wife still talks about it and remembers the name! That is a very good sign. I made my own basting bottle by taking a used plastic bottle (Aquafina, Dasani, etc.) Drilled a hole or two in the lid. Filled and off we go. Works great. Easy, cheap and disposable.

    windy day but got the brisket done...

    Eric, What is the name of the gloves (that your helper is wearing)? Are they heat resistant? Where did you get them? I have some Orca Silicone but it can be hard to grab stuff since it is just thumb on one side and fingers on the other? Great looking brisket.
