    Had a good cook Friday night, put on at 5:30pm, took off at 6:30am, 206 internal, let sit for two hours and then chunked for bbq beef. Only 13 hours for a 20 lb chuck roll. This one went much faster than others that I have done. Hope pictures post properly. Chuck Roast

    20 lb Chuck Roll

    Doing another big guy tonight on the WSM. Plan on putting on about 5:30pm cooking all night at approximately 225,putting in foil with a little mop about 7:00am and pulling at 195 internal hopefully about 10:am. Will take some pixs and post them after the cook if it turns out.

    7 1/2 lb rump roast, choice quality

    Putting on a nice rump roast on the WSM, 9:30 pm, full load of Kingsford, 6-8 nice chunks of mesquite, modified water pan full, covered the meat with olive oil, used heavy stubbs rub, will cook overnight and see what happens, has a nice fat cap, hopefully this will help bast this thing.
