Putting on three of these monsters early tommorrow morning. Would love to use WSM's but they
don't fit. Finished tuning modifications of our old mobile and seasoning on Friday so will see if
the old pit works. Plan on starting fire at 4:00am, probably throw the cow parts on about 5:00am
and expect the cook to be 12 hours. I know most folks say 1 1/2 hours per lb but for some reason
these briskets usually hit tem about 1 hour per pound. Have pit balanced so I have consistant temps
in all four corners on both the upper and lower rack. Pit is a 24 x 40 mobile. I believe I can put two
on bottom and one on top. Did one on Thursday on a WSM and had to cut off a big chunk and
put it on bottom.
