Doing another big guy tonight on the WSM. Plan on putting on about 5:30pm cooking all night at approximately 225,putting in foil with a little mop about 7:00am and pulling at 195 internal hopefully about 10:am. Will take some pixs and post them after the cook if it turns out.
 
Yes, please post some pics. I'm not sure I understand what a "chuck roll" is. I know what the chuck is, but not the roll.

Wouldn't this cut be a CLOD?
Butchers are renaming cuts for marketing purposes all the time.

Thanks, Bruce, not sure why I didn't think of doing that myself.

Funny how "chuck roll" renders two basic results in Google: pages about the cut of meat and pages about Chuck Berry!

Turns out that there are 3 major muscle groups the make up the front shoulder, the first the chuck roll, then the blade clod and the shoulder clod, learn something everyday.
