I did pepper-stout beef again yesterday. Sometime around 8am I started a chimney, filled the ring (ring along w/ chimney estimated to be about half-full), foiled the pan & warmed up the smoker. The rub was granulated garlic, dehydrated minced onion, dehydrated minced jalapeno, pepper corns, some coffee beans - ran all that through the mini food processor...forgot salt so I added ~1.5 Tbsp after it was on the smoker.

I had a little time to kill while I transferred my homebrew stout from it's primary to secondary, so I put it in the enameled DO & cleaned & sanitized the kitchen etc.

Into the oven @ just after 5pm, went to help family deal with an issue, home just after 8pm & time to eat!

When I was scooping it out of the DO into a dish to heat up for today's lunch I thought "this is the least memorable time I've made this". Then it came out of the microwave all moist & delicious and I thought just the opposite! Good stuff but it's almost gone already.

the very thought of going in that cold snow soo high up in the mountains makes me wanna become a Bears fan.
but
the very thought of eeting one OR both of those Pepper Stout Beef sammies gets my belly smiling Big Time!
 
I'll pass you guys the bag of rolls & a ladle :)

I need to load up the smoker next time... 4.5 pounds is not enough.
 
Great looking meal Clint and another fine example of a man practicing his craft in adverse conditions (by long before now most guys have stored their grills in your area I'm betting). Gotta love using your own homebrew for the recipe and the leftovers look every bit as good as the original meal! A tip of the cap sir...

Very nice PSB Clint and great pictures too. Although that's the only way I like snow....is in pictures:)
 
Clint, you nailed that PSB. Both those dishes look fantastic. Love the mountain views and I see your helper was keeping a close eye on that cook. Did we get a taste????
