    Fig Wood?

So my wife planted a fig tree that's growing like a weed. Cutting back the branches is standard practice, so I will have some decent sized fig twigs. I know, not chunks, but I could soak them a bit and use them in the smoker. I know the general rule is that fruit wood is good to go, but has...

HH Method, Getting the Temp Up

With the new arch-top opening on the WSM, propping the door open old-school style isn't an option. I'm thinking of using a desktop fan and directing its flow into one of the bottom vents, not enough to stir embers and ash, but sufficient to increase the oxygen supply. This, in theory, should...

    Whole Foods Briquettes

I'm all about trying new things. So does anyone have any experience with Whole Foods Briquettes? They have lump charcoal as well, but I wanted to try the briquettes first.

    Thermapen

I just ordered a Thermapen because I have multiple uses for it (the key to getting SWMBO to signing off on the purchase). My question is, would you consider it a viable replacement for a wired probe?

    When do I pull it?

My pork, that is. I'm smoking a couple butts tomorrow. I'll need to refrigerate them to serve on Saturday night. My question is, should I refrigerate the butts whole and pull them after I warm them on Saturday, or pull them tomorrow night after they're done and just warm the pulled meet...

    Second Rib Attempt...

And so much better than the first! Three racks from the local butcher, about 3.5 lbs per, in the fridge overnight with the rub my wife throws together and puts on her tri-tip (I'll get the recipe next time!) I tried water in the pan for the first time and they went for 4.5 hours pretty steady at...

    Knob Assembly

So I used my new 22.5 WSM yesterday for the second time, and the knob on the door fell apart. The metal threads inside the plastic handle popped out and rendered the entire assembly worthless. (New one on the way, but still...) My point being, am I the only one who thinks the assembly is kinda...

    Door Upside-down for HH Brisket?

So I'm doing my first HH brisket today, and so far so good on keeping the temp up with just the vents wide open. However, should I need to prop the door open, I have a problem. Seems my 22.5 WSM has an arch at the top of the opening, which means there's no way for me to secure the tab from the...

    Trader Joe's Charcoal

OK, another newbie question. I'll be doing my first smoke tomorrow, ribs because kids want them, and a LOT of them, and I'll be using Kingsford because it seems the safe bet for a rookie. However, I just picked up an 18 lb. bag of Trader Joe's Hardwood Briquettes. Does anyone have experience...

    Identifying wood

I can identify wood from trees with leaves, easy to do. However, I get a couple cords of split hardwood firewood every year and I'm sure some of it could be used for smoking if I break it down. Does anyone have any ideas on how to identify split wood that only occasionally has any bark on it?
