What is everyone cooking this weekend?

I'm doing my first attempt at high heat brisket on the 22.5" today. Got it on just after noon and am going to check the temp in the flat around 14:30. Hope it works out....the temp is not getting near as high as I expected. Guess that's better than too high. I may just have to wait a little...

any special method to use my WSM in the rain?

I find both of these to be great options as well FWIW. I have enough overhang around my house that I can get a resonable and safe distance away from the house, but still be out of the elements quite well. If cooking out near my shop I've cooked under the overhang and/or just inside the door with...

    WSM lid thermometer

I checked the one in my new 22.5" WSM a few days ago, and FWIW it reads 20° on the cool side.

    Small brisket

I've never cooked one that small, but would expect it done in the 4-5 hour range and be really keeping an eye on it from 3 hours or so on.

Throw out WSM grate? Safe to use?

Wash it up good, heat it up good, and then get back to business with it. Above all, never apologize for asking a legitimate question. That's why these boards exist.

Missing Lid Damper in a New 22.5" WSM

Thanks guys, I figured they still were installed. Guess no one else has got one without them. Oh well, if there was one to get out without one I'd be the guy to buy it. I meant to include in the original post that I did get a very tight fitting symetrical 22.5" though. The center section is a...

    Weber Performer from Craigslist

Nice find on the Performer Mike. Ever since I got mine I always use the gas assist to "cheat" anytime I'm firing up a chimney for something else. Handy little feature.
