First cook for large gathering, pork butt?s

I agree with Kyle and Erik, starting earlier is better. My wife and I usually host a 4th of July party for the neighborhood. I do six 6-7lbs pork butts which I get from Sam's. We plan on eating around 3:00 in the after noon. I like to start the butt's the day before in the morning around 10:00...

    Starting Charcoal

I found what I think is a better way to get your charcoal going using the weber starter. I was watching a Paula Deen episode where she was cooking using cast iron pots and hot coals. Toward the end of the show a helper showed her how he got a good fire going. He took a sheet of newspaper folded...

A foodsaver....are they worth the money??

I agree with the majority here that a food saver is worth the cost. I've had a Tila 550 for years. I like to buy large quantity's of meats on sale and seal them in to smaller servings for the wife and I. Works great!

    cooking for a large party

I've done Q for a group of 40+ people, I did butt's(4 10lbs) the day before, started them at 10:00 A.M. Let them go 20+ hours rotating them top to bottom at about 10 hours. Pulled them off around 10:00 the day of the party, wrapped them in foil and old towels then placed them in a warm cooler...

    FoodSaver Question

I agree with Philip, the Black and Decker bags are not worth the money you save on them. Next time I need bags I'll go with the Food Saver brand!

    ET-73

I have an ET-73 also and love it. I did notice something strange this weekend while smoking spare ribs. The temp was in the high 20's with snow flurries and the wind was blowing. I decided to put on the smoker jacket I made from a water heater jacket. Every thing was going well then I looked...

    Buckboard Bacon

Bruce, that stuff looks awesome! I hate the store bought junk they try to pass off as bacon, it should be called fat with a little meat. I'll be trying your recipe in the near future. Thanks for your report.

    Sand vs. water in pan

I agree with Brian. I have never used water in my WSM only sand. I've done a dozen or so smokes and I can't say anything has been dry. I have a Smoky Mountain Smoker that only water was used in, if you were to compare the results I'd say they were the same....... except the WSM is much easier...

    Cold Weather Smoking

I'll be smoking some pork spare ribs on Saturday. The forecast calls for snow showers(1 to 3 inches) and a high of 15. I used a hot water heater insulation blanket to make a cover for my WSM, just for days like these!

    Digital thermometer ???

I removed one of the top bolts from the arm that supports the top grill and pass the probes through the hole, works great. I came across that idea in this forum some where. If you go to the Tips and Mods part of the forum, you will find other great ideas.

Ordered mine from Amazon.com also off this website. Free shipping and in my case no state taxes, and it helps out TVWBB. What could be better?
