    First Time With Water in the Water Pan

    I don't like using water in the pan - I just foil it. I use a temp controller for longer cooks - but I only use it for overnight cooks. I have also had better luck with baby backs at a higher temp - 250-275, which the WSM will hold pretty steady without using much of a heat sink.

    22.5" WSM ? maintaining low heats

    I have no problems keeping the 22.5 temps low. I can lock on to 225 and keep it there with little to no work. I don't use water or anything as a heat-sink either, just a foiled pan.

    Lid Almost Sealed Shut

    I used white vinegar, water and drop or two of dish soap in a sprayer. It worked on the lid and the top vent (which wouldn't move with a hammer before).

    They were 2.58 at Sam's last night. All they had were Choice Angus!! Too bad I just cooked one on Tuesday or I would have picked another one up. That doesn't seem bad to me. I was just in Florida and they were about $1.00/lb higher (at a different grocery).
