Very much a last minute deal, cooking for my brothers girlfriends family. Sadly her mother is really ill and this may well be her last holiday. Feeling quite a bit of pressure to deliver a nice spread to feed 14 or 15 people. They have all had my Q before and loved it BUT I have NEVER smoked a...

Who Like's HOG!!! and I've got an assistant :)

Not to get to far into the "state" of Michigan/Detroit but yes it's really tough here, day's like today make it all a little easier to swallow. Especially when your loin is as moist as ours tuned out:D Google Flint MI, poverty and see how bad it can really get. Or try Goebel Brewery, which was...

Input wanted for a custom made wsm insulation system.

I think I'll do a paper pattern and post some pic's. Super busy but I am pretty confident I can come up with something to make most of us very happy:wsm: I'll try to have pic's up Thursday, should give a good visual of where I'm at with the design as of now. Quick answers to the points made so...

Input wanted for a custom made wsm insulation system.

I've been a sailmaker for 30+ years and can sew anything and get the material needed at our cost. First thought's... I'm thinking 2 pieces one for the lid/dome and a second piece for the main body. The top should overlap down about 2 inches? and the main body "jacket" should extend down to...

Gimme' some ideas for a 'new" pork butt technique please

This weekend is gonna' be all about PIG!!! Planning on doing 2 butt's and 3 slabs of spareribs. The rib's I'm good with, oddly enough butt's have always been a weak point for me. I've tried many technique's and the results have been pretty inconsistent. Looking to try something new, standard as...

First brisket's on 22.5 WSM advice please

Ahh, So Cal, I lived at the foot of Point Loma Ave, in beautiful South Ocean Beach/O.B. for 8 years. Great time of my life, did a lot of BBQ/Grilling on the roof of the apartment building I was managing then. We really had it made, I chose who to rent to and had a great group there. Nothing...

    Trader Joe's Charcoal

Used it for year's sparky or not, the first time you light up a chimney of this stuff you know by the smell it's great. A. The only ingredient other than wood is cornstarch. B. Long, really long burn times, and steady as a rock, the whole low ash thing is no joke amazing for a long low and...

    3-2-1 method temp overshooting

I lust did it for the first time, 2 racks as my second cook on a new 22wsm and luckily I read up on that topic first. I went 225 to 230 top grate temp 2 hours on the smoker 1 hour in foil 1 hour sauced no foil with pit opened up to 275 and the were nice perhaps even a tiny bit overdone for...

    Cutting Notch in 18.5 WSM

I've got 3 webers from my genesis 2 are pretty accurate plus they are thin and long. I used to use em' through the top vent on the kettle while smoking on that. With a little bit of tin foil molded around the probe just under the dial housing I was able to angle it to get just below the top...

    Cutting Notch in 18.5 WSM

I did it and it's great, another benefit for me was that along with the probe cables I can slip a good dial thermometer through there as well.

    Tel-Tru Thermometer through vent hole

Something I learned on my last cook, I went ahead and did the "notch mod" for my probe cables. As it turns out I had just enough room to slip one of my weber dial thermometers through the notch and under the top grate. Worked well and stayed out of the way, was within 2 degrees of the maverick...

Nap Time... Bunt Ends... I stashed a few or they'll be gone after my nap. Flat... 204 and 207 F when done. Temped down and ready for a rest, like me. Rub has both instant espresso and cocoa powder, these ones get BLACK!!! Time to pretend I'm watching golf while snoring at the same time...
