Pulled a Tri Tip out of the freezer Saturday night and grilled it on Sunday. Made a really good Jalapeno Squash Casserole to go with it and also some Sweet Potato Wedges. Earlier in the morning I baked some bread, Pain de Campagne. Had a fun day preparing and doing this cook.

Later in the day I prepped the squash casserole. Used yellow squash for the bottom layer.

A pinch of grated sharp cheddar for second layer. Grin.

Sliced yellow onion after that.

Mixed eggs, heavy cream, salt and pepper and poured over veggies. Then topped with pickled jalapenos. Another sprinkling with rest of cheese. Foiled and put in fridge.

Sweet potato wedges tossed in a couple tablespoons of oil. Then sprinkled with brown sugar and rub.

Tri Tip rubbed down with Simply Marvelous Pecan Rub.

Put the squash casserole on for 45 indirect, foiled for 45 minutes.

Got the TT on using my Vortex for this cook. Seared the meat for one minute a side on my Weber Searing Grate. Removed and moved to indirect heat for remainder of cook.

I put the sweet potatoes on over some direct heat. Recipe called for this for more even cooking.
