Skillet Crown Meatloaf and Sauteed Spinach and Mushrooms

I need to get going on my spring work around the place but wanted to get this cook in first. Saw this recipe for a Skillet Crown Meatloaf last week and knew I wanted to give it a try. Sided it up with Sauteed Fresh Spinach and Mushrooms. Lastly, a couple of fairly large russet bakers. Here goes.

I had a hard time with a obtaining a few of the ingredients in this recipe, primarily the Chipotle Ketchup. Ended up making some myself. Just a shot of the finished product. This sauce includes 4 chipotle chilies in adobo sauce, one large jalapeno pepper, Olive Oil, small diced onion, chopped garlic, one cup regular ketchup, sugar, cumin and chili powder. Combined and simmered for 15 minutes and then into food processor.



Re-hydrated the dried mushrooms in some beer (I used Miller High Life) and simmered for about 15 minutes, along with some diced white onion.



Combined one pound of 85/15 ground beef, one pound of ground pork and 4 1/2 ounces of Chorizo.



Added the mushrooms and the grilled onions and continued to mix.



Recipe called for bread crumbs, but I prefer crumbled soda crackers, chipotle ketchup, crumbled Queso Fresco, an egg, capers and a couple of tablespoons of Steakhouse Seasoning. Mixed completely.



I didn't mention it, but I halved this recipe as it was huge. As a result, I used my 8" cast iron skillet for the meatloaf. Used a small oven safe bowl to help loaf keep it's shape.



Slathered the loaf with more of the chipotle ketchup and topped with grated Manchego Cheese.



Lastly, topped meatloaf with sliced bacon. (From my recent batch using Bob's recipe of course).



Fixin's for the Sauteed Spinach. Baby spinach, crushed garlic, mushrooms and balsamic vinegar.



Meatloaf on for about an hour and 15 minutes.

Wow, what a delicious meal. The meatloaf had so many wonderful flavors and of course works well with the bacon. Really liked the spinach as well. It's a nice quick side. Take care everyone and hope you have a great weekend. Thanks for looking.

That looks delicious! Love the ingredients in the meatloaf. The spinach/mushrooms look terrific, too.
 
I just saw this on line last night and thought 'WOW'! Yours looks even better!
 
Living with the meatloaf queen of Arizona ( she made meatloaf on the performer last night) I know this will be on next weeks menu when the rains clear out. And I can't wait to try it. Great cook Cliff, meatloaf perfection.

So, Cliff, what you're saying is you made a bacon-wrapped meat bundt cake?!?! :) Or, maybe it's a meat donut with bacon "glaze"? Whatever you call it, I'd take a big ol' slice of that! Nice cook (and way better photography than I managed at lunch today!) ;)

Cliff another fantasting cook, as said above your choice of ingredients is special, the spinach is the best.
You make me want to go out and cook something.
 
Cliff, a very tasty and innovative cook once again. I will be borrowing this meatloaf recipe, sounds like many depths of flavor.
 
Cliff I start to smile at the beginning of your post and then more and then a wide grin and then Hey Kim, you've GOT to see this! Way to take a comfort food to a new level. Wonderful cook. I really don't know how you do it. You are a very creative and intuitive chef!
 
Your Meatloaf Crown looks fit for royalty Cliff! And I love the Spinach & Shrooms, will have to try that. Great cook! How about a link to the recipe?

WOW!!! Cliff you nailed that one way out of the ball park. Meatloaf is to die for and the spinach and mushrooms outstanding. Thanks for sharing this incredible dinner with us.
