I need to get going on my spring work around the place but wanted to get this cook in first. Saw this recipe for a Skillet Crown Meatloaf last week and knew I wanted to give it a try. Sided it up with Sauteed Fresh Spinach and Mushrooms. Lastly, a couple of fairly large russet bakers. Here goes.
I had a hard time with a obtaining a few of the ingredients in this recipe, primarily the Chipotle Ketchup. Ended up making some myself. Just a shot of the finished product. This sauce includes 4 chipotle chilies in adobo sauce, one large jalapeno pepper, Olive Oil, small diced onion, chopped garlic, one cup regular ketchup, sugar, cumin and chili powder. Combined and simmered for 15 minutes and then into food processor.

Re-hydrated the dried mushrooms in some beer (I used Miller High Life) and simmered for about 15 minutes, along with some diced white onion.

Combined one pound of 85/15 ground beef, one pound of ground pork and 4 1/2 ounces of Chorizo.

Added the mushrooms and the grilled onions and continued to mix.

Recipe called for bread crumbs, but I prefer crumbled soda crackers, chipotle ketchup, crumbled Queso Fresco, an egg, capers and a couple of tablespoons of Steakhouse Seasoning. Mixed completely.

I didn't mention it, but I halved this recipe as it was huge. As a result, I used my 8" cast iron skillet for the meatloaf. Used a small oven safe bowl to help loaf keep it's shape.

Slathered the loaf with more of the chipotle ketchup and topped with grated Manchego Cheese.

Lastly, topped meatloaf with sliced bacon. (From my recent batch using Bob's recipe of course).

Fixin's for the Sauteed Spinach. Baby spinach, crushed garlic, mushrooms and balsamic vinegar.

Meatloaf on for about an hour and 15 minutes.
