SO your total cook time was 7.5 to 8 hours? How did you pull out your water pan after being in your smoker for nearly 3 hours at > 250 degrees? That had to be tricky
 
Great looking beef ribs Enrico. They look really juicy too. I have never done any and ant to try them soon. Hope mine turn out half as good as yours...
