Today was the day I got the go to the class I won from the drawing here. Thanks again Harry and Chris!!! Was a packed day of listening, tasting, learning, tasting, doing, and tasting. He sure packs a lot of stuff in 8+ hours!!! The booklet he hands out has 90% of the information down, so you can listen and pay attention and not have to write too much stuff down. Harry is certainly an Ambassador of BBQ, you can tell he loves what he does and wants his students to love it too and spread the love to others.

Harry and his Fiance Donna teaching us his philosophy and techniques about BBQ. Harry and Donna each have their own BBQ teams and by the sounds of it do just about everything differently, at least the details differently.

Sounds like a great experience John. It is awesome that most of the notes are taken for you. So much more is learned when you are focused an not recording.
 
He even threw in some grilling techniques, how to do a prime rib in about 45 minutes,

Like I said it was a jam packed class. We had a guy from Ethiopia so in honor of him Harry invented a dish using a date, Ethiopian bread, bacon and ja few other ingredients. He also taught us how to back a rub, BBQ sauce, pork and beef injections, how to prep comp chicken, how to prep a butt and brisket for backyard bbq and comp, scotch eggs, tri tip, rack of lamb, prime rib, baby back, St Louis cut pork ribs, and beef back ribs. He also cooked 3 types of sausage just for the heck of it and of course we had to try it ALL!!! He also went over food safety and how to light a fire. Plus he goes over the science of everything too. Was certainly a fun class to attend and a lot of stuff to soak in. So happy I got a chance to participate in this class!!
 
I am so envious! However... the win could have not have been for a more talented candidate.

You da man John! Looks like an amazing time, that 45 minute PR is perfect. Same color inside to the outside. Do you mind coming here for Christmas and duplicating that? :)

Congrats John, on being able to go to Harry's class. By the looks of the pics it was amazing and all that food. Love to have tried some of it. Again congrats and looking forward to seeing some more of your great cooks.

Question for Harry, how did you get that great smoke ring on the brisket?
 
Looks like yesterday was indeed an enjoyable day for all !
If I remember correctly, You have a homework assignment due within the next 2 weeks. Any thought on what that may be ?
And for anyone in the Los Angeles neighborhood, Harry will be completing at Santa Anita next Saturday.
