Gumbo

Gumbo with a slight twist. I hate okra and not a big fan of Polish sausage. So I replaced the Polish sausage with Italian sausage smoked on my mini - My 2nd Cast Iron cook, probably the last for 2014. I love my 1978 Kettle. I was able to maintain 450 degrees through out this cook

That's as exciting as it gets, LOL
Actually don't tell anyone, but it was a "spare the air" day. I was on the wrong side of the law using my kettle that day. But, I'm a wild and crazy guy :cool:
 
Looks good Chuck, okra ain't my favorite either so to avoid it I just don't make anything I call gumbo. Works for me:p
 
Usually gumbo stews so long the okra kind of disintegrates. I'll agree that the word "gumbo" comes from okra, but to me, the roux is more critical. Typically you just need one of 3 thickeners, roux, file, or okra. Or all three!!!
