Last month I smoked a brisket.
But saved (froze) the point until last week to make burnt ends.
On the kettle with lump for about 3 hours at 225 to 250
The bottom, where I removed the fat and added rub, got a little smoke ring too, but no wood was used.
It can dry quickly, like the flat, so we plucked it out of the foil bowl one bite at a time.
More of a dinner snack than a meal.
