Burnt Ends equals Cow Candy

Last month I smoked a brisket.

But saved (froze) the point until last week to make burnt ends.
On the kettle with lump for about 3 hours at 225 to 250

The bottom, where I removed the fat and added rub, got a little smoke ring too, but no wood was used.

It can dry quickly, like the flat, so we plucked it out of the foil bowl one bite at a time.
More of a dinner snack than a meal.

Ohh my what a treat! killer looking brisket. Never had burnt ends. Shouldent be on the dry side? Anyways i bet i could eat a bowl of those.

James what cut do you use for that? - Sounds delish since i have a hard time getting a brisket.

I used CSR's Country Style Ribs (basically a cut up Pork butt) to make pig candy.
 
I remember this one month old cook and burnt ends looks very tasty.

Bob, you have inspired me many times before and this time too! If and when we ever get to use charcoal again I have to give that a try, just looks to good not to give it a shot!
 
Haven't made burnt ends yet. This post makes me want to make them right now! Great cook Ringo Star Correl. Peace and love. Lol
