I think I went to college with a guy named Rusty Grates.

    Texas > Austin: Franklin BBQ

Thanks for taking the time to post this. When someone asked here about BBQ in Austin a while back, I recommended Franklin's based on my son's experiences. I still haven't been there. But it is way up on my list. Now it's way upper.

    Tomato Sauce...how to thicken

This is my fresh tomato sauce. (I also have a recipe for a deep rich sauce that cooks in the oven for 3 hours). This is naturally thick. No issues. Tomato Sauce ----------------------------------------------- Recipe By: Steve Cutchen Yield: 4 quarts Summary: Ingredients: 5 tablespoons...

    I must have a faulty WSM 18.5...

I think this is the deal.. You mention moisture in your Weber thermometer. The boiling pt for water at your altitude is 195F, so if there is moisture in there, it may limit the reading, boiling inside the lid at the probe, condensing outside at the glass... and simply refluxing at the bubble...

If you do it right, minutes! Oh wait...

Griddle - Cast Iron, or Stainless Steel?

Steel will heat up faster, but cast iron will hold heat better. So if you want that griddle to stay hot when you plop something cold on it, go with cast iron. With steel, you'll be moving to a new part of the griddle when you flip. Also, a well seasoned cast iron griddle is as good as teflon...

    Cast-Iron Griddle

Mine say part number 7542 (I have two), and I use them all the time. It is my go to tool for shrimp. Also, anything blackened. Anything delicate, like fish. I had to grind the side ears off of one of the plates in order to get them both to fit side-by-side. I don't use the grill side very...

    Margaritas for a crowd

I'm going to give this a try! I've been looking for a good rocks recipe. I have an excellent frozen marg recipe, though. I remember this recipe by thinking thirds. 1/3 tequila, 1/3 triple sec, 1/3 lime stuff that is half Rose's and half frozen limeade. Frozen Margarita...

    #5 Sauce?

This is my current BBQ sauce. A lot like #5, but a lot less vinegar, if that floats your boat. Not a Carolina-style sauce. And some other changes that I like a lot. Steve's BBQ Sauce -- 2 cups ketchup 1/8 cup apple cider vinegar 1/4 cup Worcestershire sauce 2 tablespoons molasses 2...

My Best Turkey yet!! Salting beats Brining in my book!!

I agree totally. Here's my recipe: Dry Brined Turkey -- Based on the Dry Brined Turkey method published in the LA Times by Russ Parsons, which, in turn, was inspired by Judy Rodgers, Zuni Cafe, San Francisco. I've added some inspiration from my previous recipes of choice from Wolfgang Puck...

    Chili on WSM

I think using the WSM as a heat source is fine. But as a flavoring tool, I would use it on your chili meat and maybe your chiles directly rather than trying to impart a smoke flavor to the entire dish. Otherwise, you are smoke-flavoring the other ingredients in your chili, which may have a more...

    Weber's latest

That new Genesis is calling my name. My Genesis Platinum still cooks fine, but I'd really find the front to back burners useful. I wonder if it has the same grill size, i.e. will by cast iron Weber grill plates still fit?

    I need a Spoonbread Recipe

I know this is too late... but in case someone searches... I used to use the Washington-brand mix, which has been discontinued. But they published their recipe on line when they quit selling the mix: Washington Spoon Bread Mix Using Indian Head White Corn Meal Indian Head White Corn Meal 1...

Summit S670 vs 01 Genesis Gold C. worth the $?

I have an 05 Platinum B, and I've had Genesii since they first were manufactured. My brother has a 4 burner Summit. I really like his Summit. I use a grill plate on my Genesis for blackening and such, and front to back burners would make that much more convenient. In fact, it would make any...

    New Genesii Must Be Imminent

I don't recall what was left in stock. All Genesis grills were $100 off the regular Ace Hardware price.

    Finally found a gasser

That a 1st generation Genesis, baby! The Genesis of Genesis. That is exactly like my very first Genesis, 1985. Same color, same everything. It's a Genesis 3, not a Genesis 3000. My second was a 2000 (no side burner.) Congratulations on a great find!

    New Genesii Must Be Imminent

I was at my local Ace Hardware today and they had their Genesis grills $100 off. Also the general grill sales area of the store was S P A R C E. There were very few grills on the floor and a lot of open space. Those new front-to-back-burner Genesis grills must be set to roll out for the...
