Pulled out Stogie's venerable jerky recipe, and went to town with some CostCo eye of round roasts. About four pounds of meat turned into this:

I don't suspect it will last long..... :)

Marinated for two days, 2x2 snake in 22", stacked lower grate on top of upper grate to get everything as far from the heat source as possible, 180 degrees for about 7 hours.

PS: Made some more bread......15% whole wheat sourdough.

Looks great. What was your marinate?

I used the marinade from Stogie's (Kevin Taylor....old time TVWBB member) website:

Per 1lb of meat:

1 pound Jerky meat, sliced and ready
1 tablespoon Tender Quick OR Kosher salt
1 tablespoon Sugar
1 tablespoon Honey
1/2 tablespoon A1 Steak Sauce
2 teaspoons Beef rub
1 teaspoon Garlic powder
Hot pepper powder or Hot sauce to taste
Enough water or chicken broth to cover

Great looking jerky Rich. Your bread is, of course, over the top. I like a 15% blend with whole wheat also. That wonderful San Francisco climate makes for a unique sourdough flavor that I really miss.

Costco's eye of round is IDEAL for jerky... nice cuts with VERY little fat to trim....
In fact, I'll be smoking jerky this weekend.
