grilled direct/indirect until it hit 127º inside this 2½lb hunka beef... employed red oak wood for smoke
left it to rest about 10...
...then got ready to slice it up.
And I did just that.
served it with other stuff too.
Like all tri tip, it was EXCELLENT!
