"Traditional" Xmas Eve Ribs

I posted in the Christmas tradition thread that I've been cooking ribs for my in-laws Xmas Eve party for a couple of decades. Even though we aren't having the party this year due to Covid, I'll be darned if I'm not making ribs anyway!!! :) I got a couple of CostCo three-packs of St Louis spares, and made a day of it! I started up the grill at 8:30 this am, prepped all six racks (trimmed, membranes removed, dusted with Dizzy Pig Dizzy Dust), and got them all on the pit by 9a. Started off on "low" for extra smoke, then kicked it up to 255F after an hour. After six hours, they came off the grill, tender as can be, and are now packaged up for delivery. At least this part of our Xmas Eve tradition is still happening this year!!!

Ribs look great! We do shrimp n grits on Xmas Eve. Used to do fondue and Dungeness crab. With weather and season delays we can’t get fresh crab now until after the new year usually.
