Tonight's Dinner: Epilogue

Yesterday, I started a thread entitled Tonight's Dinner (seen here→ http://tvwbb.com/showthread.php?62617-Tonght-s-Dinner-(27Oct15) )
today, the results....

pig log probed for an internal temp of 145ºF ... indirect, with apple wood for smoke value.

about 45 minutes later, the alarm when off indicating it's cooked, so I removed it from the Weber.

temps inside the Weber kettle did reach as high as 420ºF... guess I went overboard with the charcoal a bit.
Anyhoo.... after a ten minute rest, I sliced it into generous one inch thick wheels...

served with roasted Belgium sprouts and crispy baked russets

That looks mighty tasty, Jim. Is there a difference between Belgium and Brussels sprouts? I only this year started eating Brussels sprouts and I can't get enough of them
 
WOW!!! Jim the pig log is magnificent would take that plate of food any time. Yes Rich is going to steal that one for sure! That was well worth the wait to see my friend.
 
What a great meal. The cheesy middle looks delicious. I've never tried this type of cook but it looks really good.
