So here's what happened.
A month ago or so I used the WSM. I Used water in the pan. Normally the next day I clean out and cover it. I forgot then 2 days later it rained. Then I forgot to clean again. Well yesterday while I was getting ready to grill this horrible smell came to me... At first I thought it was a dead animal or something...
As I got close I remembered what I did .....lol



So I cleaned it out with oven cleaner and Clorox spray. I lost most of my seasoning.
Here's the part that some of you guys may disagree. I loaded up the Wsm and brought out my lighter fluid to start a high heat fire. I have the lighter fluid When it free with purchase of kingsford charcoal last year. Lol
Put the grates on direct fire.

Kept adding lots of wood. Peach and cherry

I didn't care about the heavy smoke. I just wanted smoke.

I used some pork skin I had and bacon. Sprayed a little Pam. Didn't have much to begin with.
I'm really happy with the results

I just looked at my wsm and it looks great and has no bad odor or any sign that it had mold and who knows what else. Today I will be doing some ribs.
