Sriracha, juice of one Orange, Honey, half a jar of Orange Marmalade. In the pot to simmer for a few minutes. Then allowed to cool. Marinating boneless, skinless thighs for a few hours in the fridge.

On the skewers then on the Genny with some juice catching foil beneath. Basted every few minutes with the reserved Fire Sauce

Caprese with the last of our nice tomatoes from the garden, fresh Oregano and Basil from the garden. Kosher and fresh ground and a dollop of EVOO just before serving.

On the table with a really nice dry California Riesling and some Jasmine Rice

Quick, healthy, full of flavor...works for me! I have yet to use marmalade in my grilling repertoire — definitely need to try that some day.
 
Looks super good Bill...I have been in the market for some lighter meals like this....thanks for sharing!
 
Consider it stolen, to good not too. I've grilled marmalade a few times, really hard to keep it from falling through the grates though.:p
 
Just made a batch of this. Excellent, although mine is more red than Bill's, (I went heavy on the sriracha). I finely chopped a scotch-bonnet chille for extra zing! Thanks Bill.
