Decided on ribs for my cook on Game Day. Did St. Louis Spares with a couple of bakers and grilled asparagus.
Had never used these ribs before. Found them at Walmart a couple of months ago and put two racks in the freezer.

Seasoned with Simply Marvelous Sweet and Spicy.

On the WSM at around 2:30. Doing a 3-2-1 cook today running the smoker at 225. Minion Method and Pecan for smoke.

After 3 hours.

A few weeks ago I watched a program on the Cooking Channel that featured a Rib Place in North Carolina called 12 Bones Smokehouse. It featured their signature Blueberry Chipotle Sauce. It looked so delicious on their ribs that I ordered a few bottles that day.

At this point, I sauced the ribs and added some brown sugar and a little honey. Wrapped in two layers of HD Foil.

Back on the WSM for another 2 hours.

Removed the foil, applied more sauce and let it ride for another hour.

Done.

Potatoes and asparagus going.
