St. Louis Spare Ribs After The Game

Decided on ribs for my cook on Game Day. Did St. Louis Spares with a couple of bakers and grilled asparagus.

Had never used these ribs before. Found them at Walmart a couple of months ago and put two racks in the freezer.



Seasoned with Simply Marvelous Sweet and Spicy.



On the WSM at around 2:30. Doing a 3-2-1 cook today running the smoker at 225. Minion Method and Pecan for smoke.



After 3 hours.



A few weeks ago I watched a program on the Cooking Channel that featured a Rib Place in North Carolina called 12 Bones Smokehouse. It featured their signature Blueberry Chipotle Sauce. It looked so delicious on their ribs that I ordered a few bottles that day.



At this point, I sauced the ribs and added some brown sugar and a little honey. Wrapped in two layers of HD Foil.



Back on the WSM for another 2 hours.



Removed the foil, applied more sauce and let it ride for another hour.



Done.



Potatoes and asparagus going.

Sliced some Field Blend #1 from earlier today.

I've never used Smithfield Ribs before. They were very good, but they had a troubling piece of cartilage between the ribs, guess it was part of the chine bone. Should have realized this and removed it. I was able to slice right through it and it pulled right out. Just kind of a nuisance and ruined the sliced pictures. But you get the idea. The ribs were delicious and that Blueberry Chipotle Sauce was fantastic. Thanks for looking.

I've wondered about those SL ribs at Walmart. We haven't done SL ribs in a long time, been using Costco's BBs HH for all our rib cooks. Can't remember the last time I did a 3-2-1 The HH doesn't seem to work as well on the SLs as it does with the BBs.
I will say they look great and that blueberry chipotle sauce sounds killer.

I'll have to give that Blueberry Chipotle Sauce a try. I almost made homemade BBQ sauce for my SBS ribs, but I had a couple bottle of Stubbs Sweet Heat, and you can't go wrong with SSH

Ribs look stellar, Cliff! My SB ribs were Smithfields as well, but from Safeway. I thought they were pretty good/meaty. There were cartilage bits, but that doesn't bug me...
 
Cliff, those ribs look awesome. Great job and that sauce sounds very interesting. Your pics tells the story for sure.
