For what it's worth, I've been making bread since about 2012, and I didn't get a mixer until this Christmas....After years of wanting one, I got a Stand Mixer. Seeing all the breads made on this forum, I've always wanted to participate, but didn't have the mixer. Now I d

Don't tell my bride that you can make bread w/o a stand mixer, it was the only way I could get her to buy me one, LOLLove it, @ChuckO ! Bread is a lot of fun, glad you got a nice mixer so you can dive in. For what it's worth, I've been making bread since about 2012, and I didn't get a mixer until this Christmas....It IS really nice for enriched breads, really stiff doughs, etc. I still enjoy getting my hands into a batch of dough and really feeling how it changes through the process.
That's a very nice looking loaf of sandwich bread. You're off to a great start. If you decide to dip your toe into the sourdough/naturally leavened side of things, let me know. I can share some of my starter, and favorite sites (thefreshloaf.com is the best!)

PS: I got some pasta cutter attachments for my Atlas 150, a hot plate/burner to use in my smoker for lower temp smoking (sausage, cheese) and some other misc culinary stuff.)
Thanks Jim@ChuckO: if you don't have it already, get yourself a copy of this book. It'll elevate your game - mixer or not. Very similar baking method to the video you shared.
