Pork Crown Roast on the Weber Kettle

I busted out the Weber Kettle for our Christmas dinner. On the menu:
  • Crown Roast of Pork
  • Cornbread Stuffing Muffins
  • Cranberry Jello Salad (Granny’s recipe)
  • Green Salad
  • Hawaiian Rolls
I frenched the bones on the crown roast and boned out the little chine bones and buttons to make it easier to cut and serve. I dusted liberally with Texas BBQ Rub and trussed it up by binding it circumferential twice. I didn’t cut between the chops to get it to double around; the roast was long enough to almost form a perfect crown.

I put a half a chimney of Kingsford on one side of the Kettle on top of a mix of unlit lump and Kingsford. I let the kettle get to about 325 to 335 and adjusted the vents until it was steady. I put the crown roast on a pizza tray and set it on the indirect side of the grill. It cooked for about 1h and 45m before hitting 130. I took it off and glazed the outside of the crown roast with maple syrup (1/4c), balsamic vinegar (2T) and Dijon mustard (2T). I put it back on the kettle for another 15 or so minutes until the thickest part of the roast hit 140. I took it off and let it rest.

Sorry I didn’t get a ‘sliced‘ shot. It went quick! Merry Christmas All.

That looks killer, Jeff! I've done lots of racks of pork, but never in a crown. What a great Xmas dinner! Thanks for sharing!

I love doing those! Have not done one in a couple of years, the little paper frills on the end of the ribs always made my grand children laugh! Not too hard to do but, they do take a little time.
That’s a great example of a crown roast of pork! I bet it was delicious!

I went to Costco today to see if they had anymore Racks of Pork......:(:(....Nope.
