It's been getting pretty chilly here the past few days so I decided on a good old fashioned beef stew for dinner.
The fixin's.

Earlier this summer, I saw a post by Paulie, I think, featuring his new Santa Maria style grate for his Weber Kettle. I immediately knew I had a great use for it. My wife got me one for my birthday. I do a lot of cast iron stuff on the grill and felt it would be great for bringing something to a boil and then reduce to a simmer immediately by raising the grate. It worked like a charm on this cook. So much better and easier than using fire bricks to elevate DO.

Browned the meat over high heat.


Removed meat and drained pot. Continued browning the onions.

Added everything else and raised and simmered for two hours.




Plated with some bread.

Stew was delicious and fun to make. I really like this Santa Maria type upgrade for the Weber Kettle. Have a good weekend everyone and thanks for looking.
