New England Chicken Pot Pie

I saw this recipe in one of my Lodge Cookbooks. New England Chicken Pot Pie with Biscuit Crust. Sounded really good so I thought I'd give it a try. As it only contains chicken and veggies I went with some Grilled Parmesan Potatoes for a side. All the steps of this cook were performed on either my 22" Red Kettle or my Jumbo Joe. Here's the cook.

Prepared the dough for the biscuit crust earlier in the day.



Wrapped dough in plastic wrap and put in fridge until ready to cook.



Here are most of the ingredient items for the pot pie. Also includes green peas, vegetable shortening and white flour, not shown.



Cubed 5 Boneless skinless chicken thighs and cooked in my small CI pan on the JJ.



My latest addition to my CI collection. This is a two quart casserole by Lodge. With my Amazon Prime and some bonus points, got it for $14.



Got the onions, celery and carrots softened up a bit.





It was a beautiful evening to be grilling.



Back to business. Stirred in the chicken, peas and mushrooms and seasoning.



Made the roux on the JJ too.

 
Added chicken broth and half and half. Let simmer until thickened.



Poured the sauce over the veggies and mixed well. Ready for the biscuit crust.



Put my Parmesan Potatoes together and foiled.



Recipe calls for the biscuit crust to be 1/3" thick. Felt like putting a blanket over the pie. Kind of ugly!



Got it on some indirect heat for about 30 minutes.



Potatoes on for same.



All done.

The pie didn't look very pretty, but it sure was delicious. So were the potatoes. Will be doing this one again down the road. Have a great weekend everyone. Thanks for looking.

That looks really good, nothing ugly about that at all. Chicken pot pies and beef pot pies are one of our favorite meals and that one is pure perfection.
 
Raw pie dough never looks nice.Fire-baked pie dough looks fantastic! Bet it even tasted better. Nice dinner.
 
Looks wonderful and will check out the recipe. Love pot pies when I am eating alone. Will have to try this.
 
Very nice pot pie Cliff! I would like to try one with thick homemade noodles to replace the veggies. Perfect color on your crust!

Dear Cliff,

This cook is smoking hot good.

I live in Central PA where most people seem to think Chicken Pot Pie needs only a stew pot and egg noodles?

This is something I'd like to try to make in my Nana's cast iron skillet because she would have made it on a coal stove and charcoal is way easier!
