I saw this recipe in one of my Lodge Cookbooks. New England Chicken Pot Pie with Biscuit Crust. Sounded really good so I thought I'd give it a try. As it only contains chicken and veggies I went with some Grilled Parmesan Potatoes for a side. All the steps of this cook were performed on either my 22" Red Kettle or my Jumbo Joe. Here's the cook.
Prepared the dough for the biscuit crust earlier in the day.

Wrapped dough in plastic wrap and put in fridge until ready to cook.

Here are most of the ingredient items for the pot pie. Also includes green peas, vegetable shortening and white flour, not shown.

Cubed 5 Boneless skinless chicken thighs and cooked in my small CI pan on the JJ.

My latest addition to my CI collection. This is a two quart casserole by Lodge. With my Amazon Prime and some bonus points, got it for $14.

Got the onions, celery and carrots softened up a bit.


It was a beautiful evening to be grilling.

Back to business. Stirred in the chicken, peas and mushrooms and seasoning.

Made the roux on the JJ too.
