more race day ribs

Jose Suro smoked some race day ribs. ...so did I! Continuing Smoke Day/Memorial Day weekend with 6 slabs of St L cut ribs, baked beans below, turnip greens in the DO and a gang to eat, watch the Indy 500 and Coca Cola 600, throw a few bean bags, and have a few cool dranks.

Prepped and ready

6 slabs up top (note the skewers to keep separation between the slabs to let the smoke thru)

turnip greens in the DO on the kettle

first tomato of the season sliced and served with salt and pepper (cute little booger)

ribs served with 4 different sauces. I served various Sweet Baby Ray's flavored sauced but the biggest hit was the Championship Ribs sauce recipe in the Weber Smoke Cookbook. I also used the rub in the same recipe for three slabs. I did not wrap the ribs to cook them but I wrapped them after they were sauced and let them rest a few minutes. That worked out well and it was a good way to keep from doin more dishes.

Yummo

Thanks folks.

Are you cooking for an army? Ha!! Looks great

Just about. 12 adults and 3 kids. 5 of the adults were some rib destroying 20-30 yr old young men.

I did have one whole slab left over. So I vac packed it and froze it for a treat some other time.

Dwain... Very nice. I'm going to check out that sauce. I have Weber's Smoke. Love the DO cooking too. Your kitchen is beautiful. Love those counters, back splash and cabinets.

Man Dwain those ribs look amazing. I finished off my left over ribs from my Smoke Day cook last night, the pictures of yours make me want more now.
