Honestly, man, those pictures are just incredible. I agree with Jim about the smoking charcoal being my favorite.

I do not. I figure that if I start doing in for money, it's not any fun anymore.

The helper is my dog "Mason". We rescued him when he was a little pupper. We didn't have the heart to change his name, so "Mason Mason" it remains. that was 14 years ago. He's been a wonderful dog.

Darn it, I just finished a delightful dinner of apple smoked chicken and pork roast but, we ate the chicken first, the pork didn’t understand that I wanted a “reasonable” lag time between them. So, we filled up on the chicken, I’ll send a picture in a minute
Now, I’m hungry for something else from the grill/smoker! Ribs would be grand!

These turned out "okay". Not great. They're too dang spicy for one. Also, I'll use a different kind of cheese mixed in with the cream cheese next time.

Fired up the WSM for the first time tonight. Test run with a rack of ribs on her.

Please ignore the extension cord for the xmas lights.

Update: Its been running for 4 hours now and holding 240-250 degrees the entire time. Very impressed at the small amount of temp movement.
