Maple Sugar & Cinnamon Bacon

Not sure how good these pics will look since I have a new laptop, and it renders photos different than my old one when I try to tweak them.
Like the old saying goes: Man with two watches never really knows what time it is.

Cured a 3 lb. piece of bacon with TQ only.
Set up the 14" WSM with a dump snake, apple pellets in the tube, and a couple pieces of sugar maple to make sure the smoke continued when the tube was burned out.

The taste is what I was shooting for, hint of sweet and cinnamon, with a fairly heavy smoke.

That is some great looking bacon Bob. I'll take of plate of that anytime.

A question Bob, my first bacon cook I used TQ and maple sugar and did not rub with anything when smoked. Did not get a lot of maple taste that way. How was the taste doing it the way you did this cook?
 
That looks great Bob. I've made the same combination a few times with the exception of the sugar maple wood I just have regular maple for the smoke. I've also done it with a high grade maple syrup and cinnamon with good results.

Gotta try the cinnamon & maple sugar rub.

Just did some Canadian bacon. It's good, but not as good as pork belly.
 
That looks really tasty!

Another thought - has anyone tried Chinese 5-Spice mix for a Bacon cure around here yet? I'll bet that it would also be really good.
 
I always enjoy seeing the Jedi Master of bacon in action. Having that little hint of cinnamon sounds like an incredible flavor for homemade bacon!
 
Now that is what I call breakfast Bob! I have been meaning to do another slab of bacon and you inspired me to get off my butt and do it. Awesome job sir...
