Grilling part of my father's day gift.

I got my father's day gift early this week. My wife and kids got me meat from wild fork foods. They got me a prime Tri Tip, a prime Picanha, and some choice Flacken Style Beef Short Ribs. So for the actual day that the gift was give for I had to go for the Tri Tip (this is the first prime Tri Tip I ever had).

Got a salt brine on it after the trim and into the frig.

Then I turned to prep some kettle cheese potatoes.
Bacon.

Made a bases, sliced the potatoes, cheese, and the bacon. My daughter made the (as she titles it) potato lasagna!

Got the kettle going and after the potatoes having a 15 minute head start the meats went on.

The Tri Tip is on with chicken for tonight and the other chicken is for tomorrow's Homemade ramen noodles.
Tri Tip pulled at 110 to wait to get a good sear.

The little black egg got the call as the searing station since the kettle was carrying a full load.

Got to do something to handle the killer wait time before I cut the Tri Tip so I got some sugar snap peas onto the kettle.

Finished with some maple cream filled truffles that my daughter made. They were the best part of the meal.

Mike - your cooks/pics are always amazing. I got tickled on your little black egg comment - I'm made some pretty killer steaks/tri tips on my 22" WSM with the same black egg method
 
So, the beef looks absolutely mouth watering, Michael, but the nod has to go to your daughter for dessert. She's a force to reckon with culinarily at a young age! Keep it up, dad! Best present you can get on FD!

I can't take credit of the term little black egg, and as normal I got that from one of the many great articles from our amazing leader Chris put together.


Now it does a great job, I gave it time to heat up and it worked great. I don't think the pictures show how good of a sear I got. That had a perfect sear on it. There was a great taste and texture from the sear.

How do you like wild fork?
One meat into the three that my family got me I am impressed. As I shared, I can only find choice Tri-Tips in my area, so this was the first prime Tri-Tip I have ever had, but it was easily the best Tri-Tip I have ever had. It was both super tender, the most tender Tri-Tip I have even eaten and had the most amazing beefy flavor of any steak (which is part of why I love Tri-Tip so much). I do think the pictures of both pre-cooked, during, and post show the high quality of the meat. It really was a great piece of meat. Now I have not looked at cost, my daughter who goes shopping a lot with me and is sharp as a tack said it was not much more expensive then when we get the choice Tri-Tip and choice Picanha at the store, but with it being a gift I am not even looking or asking. My wife also said they always have ads on Facebook which she used a code from there also. If the other two pieces of meat they ordered me are as good, I will be a big supporter and have to tell the family they found the perfect gift and also have to look at cost and cuts myself.
