First Time Homemade Pepperoni

Barb and I made some homemade pepperoni yesterday got the recipe off the Morton’s salt site.

Easy recipe to make.
Came out pretty good, had great flavor. Might try it with ground pork next time.
Got some Canadian bacon curing up also.
Looks like Barb and I will be doing some pizzas pretty soon.

I ordered 2 LBS Morton Tender Quick 2 from LEM Products, hopefully get it in the next day or so. I plan to make some Pepperoni Wednesday the 23rd for Pizza night Christmas Eve. The only thing I'm going to do different is:

Add 1/2 teaspoon Smoked Paprika
I'm going to skip the teaspoon of liquid smoke and smoke the Pepperoni on my Mini

Barb and I are going to make some changes too. I almost always make a recipe the first time just as it calls for to get a base line. After that it's whatever we think will make it more to our liking.
I think the smoked paprika is a good call and smoking it is also, as I'm not a big fan of liquid smoke. Also a finer grind of whatever meat you use will make the texture better than store bought hamburger.
