My wife is visiting our son-in-law, daughter & new grandchild, so I'm batchin' it this week. I'm getting into the canned goods, leftovers & the freezer for gourmet inspiration.
Last night I found some frozen PSB & made tacos. There was some PSB leftover & there also was tortillas, eggs, cheese & etc.
This is one of my old favorites that I had forgotten about: Eggs In Hell. Used the POS gasser.
I mixed the two sauces together in the skillet (you can use any sauce you wish, I'm partial to green sauces), & brought the mix to a simmer.
Cracked the eggs & gently let them drop into the sauce.
While they were getting cozy, warmed up the beans and the pepper stout beef.
The eggs poached quite nicely.
Lightly oiled the corn tortillas & warmed them on the skillet on the side burner.
Got out the plate, put down the tortillas, the eggs w salt & pepper, added sauce & cheese. Next came the PSB and beans.
Time to Eat!
