Deboned Chicken Stuffed with Dirty Rice

TVWBB 1-Star Olympian
First took a whole chicken and removed all of the bones.


Seasoned the meat side with some salt free Cajun seasoning


Used a boxed dirty rice but doctored it up by adding the giblets, celery and onion and stuffed the bird with it


Tied it up, seasoned the outside with Zehnders Chicken seasoning


Cooked to and internal temp of 170


Resting

hmm that's very creative. stuffed pork loin, chicken breast, etc. you see all the time. but deboning, stuffing and tying a whole chicken? very unique.
 
John, that is absolutely awesome. Is looks so delicious and was a great idea. Not sure if I could do it but might give it a try and see, thanks for sharing that great chicken.
 
Dang it, John, now I have to get my Jacques Pepin kitchen techniques book out of the cupboard again (either that, or watch Martin Yan debone a chicken in 30 seconds a few times....) Looks great, and a unique way to present a chicken. On the (ever growing) list!

You are right on track Rich! I've seen J.P. debone a whole chicken in under ten seconds and NOT cutting it open, just using his hands! I wonder if there is a slow motion video of that. He said "Think of it as taking a T-shirt off a two year old." I just got a chicken this morning, maybe I will attempt it
There is an older recipe from Julia Child making a "Chicken Melon" that uses the intact skin and she molds it into a beautiful sphere! I saw the episode once, very very cool!
