Chuck Eyes Under A Semi-Super Moon

TVWBB 1-Star Olympian
four small chuck eyes from the freezer from last January....
use'm or lose'm.... seasoned with a Santa Maria Tri Tip rub
1 T Kosher salt
1 T finely ground black pepper
1 T garlic powder
1 T onion powder
1 t cayenne

while the steaks were hissin' & glistenin'... liz whipped up some veggies in the large CIS
got some Brussel sprouts an' onions with mushrooms and taters with a bit a gaaaaarlic all in there...

Looks like you nailed another chuck eye cook, Jim! The plated pics have me wanting that for breakfast right now.:) I picked up a couple really thick chuck eyes on sale at Stoneridge yesterday. Hope they turn out as well as yours.
 
Awesome chuckies and sides Jim! When I went to bed about 11 last night it was really overcast and cloudy so didn't get
to see the super moon. :( Did I mention it rains a lot here in Georgia, especially in da summertime??? :D

Dang! That looks good. Chuck eyes and pork steaks just don't seem to exist here in the wilds of suburban Boston ....but yours look awesome.

I went to my grocer a couple of days ago. I bought two Boston Butts and had the meat cutter cut one Butt into pork steaks (bone-in) 1" thick. I will be doing them St. Louis Style (braised in a home made sauce after searing them). That makes for some FINE pork-on-a-plate...

Freezer aging didn't hurt those eyes a bit once you worked your magic on 'em Jim!

Only Super moon to be seen here last night was when I bent over to tie a shoe.:rolleyes:
