I went to my grocer a couple of days ago. I bought two Boston Butts and had the meat cutter cut one Butt into pork steaks (bone-in) 1" thick. I will be doing them St. Louis Style (braised in a home made sauce after searing them). That makes for some FINE pork-on-a-plate...FWIW
