Cap steaks, chicken + fried potatoes, and more chicken

Last week I grilled sirloin cap steaks for dinner.

Another dinner was chicken thighs and bacon-onion fried potatoes.

Yesterday for Easter was a salt brined spatchcock chicken.
In the fridge for a couple of hours with a good sprinkling of K-salt, dried well and then Mrs Dash applied.

I wanted a hot and fast cook on my 14.5" WSM, but the outside temp dropped 15° and it started raining within an hour of going on the smoker.
Nothing between the coals and top grate.

We were eating 1 hr. 45 min. after the start.

Those are the kind of cooks we like, simple but tasty. Tried to find cap steaks here but no luck so far, maybe I'll give Costco a try.
 
Great cooks Bob, like Rich said those steaks are just the right size sure hope we can fine some. Hope you had a nice Easter.
 
Nice cooks. I haven't been able to find BS thighs the last couple times I've gone for them...... Nice Cardinal.
 
Great shot of that Cardinal, Bob! Not many colorful birds to see around here, but maybe I'll try to grab a hummingbird shot.

The steaks, chick and sides look great! Nice cookin' and shootin'!

That all looks fantastic Bob, but that spatched chicken jumped out at me. That is a superb HH chicken cook on the WSM. Pictures are awesome too.

The wife would love to get a picture of your cardinals. Very pretty.

Tasty looking food, but your shot of that cardinal is even more mouth watering. I've got some bird photos that I'm rather pleased with, but never yet had a chance to get a redbird so masterfully composed.
