Hit 165 IT at the 6 hour and 40 minute mark, thought long and hard about wrapping it, but decided that since it had an amazing fat cap, I would cook this unwrapped

Did a wiggle test at the 10 hour mark, not wiggly, IT was 195


IT hit 200 at 11.5 hours

It was raining and only 62 degrees this morning when I started my cook.
I know you could use some of our weather out there, and hope you get some relief soon. At least you stockpiled a backup plan on the stairs...

Very nice!! How did you like that Kinders rub? I’ve been using it a lot as an all purpose rub on veggies and what not. I used it in the cream cheese and cheddar mix for my jalepeno poppers today.
 
Wow that looks great. Yep 60's here this morning. That ocelot looks fantastic. Nice spots. 103 degrees whoa. Chicago has had 65 100 degree days. No not in a row, not in a year, period. Since records were kept. Course 27 below plus wind.... july 95 was our hottest ever. Will not forget. A breeze for you but here it was N.O. and Houston combined. Very poor situation.

That was an amazing cook Chuck, loved the videos. Got a Costco Prime sitting in the freezer I think you inspired me to get it going.
