Cooked this bad boy yesterday as it's going to be 115 today
On the 22" WSM at 1:00AM
Hit 165 IT at the 6 hour and 40 minute mark, thought long and hard about wrapping it, but decided that since it had an amazing fat cap, I would cook this unwrapped
Did a wiggle test at the 10 hour mark, not wiggly, IT was 195
IT hit 200 at 11.5 hours
And it was wiggly
to bed for 4 hours
Sliced after four hours
I forgot to get a plated picture, we chowed down big time
Went to Safeway this morning to get a coffee and what did I see?
Look what followed me home
