I wasn't going to post another boring butt cook, but since this was probably my best of many butt cooks I thought I'd share.
Seven and a half pound butt, SYD rub, RO Chef's Select charcoal, with apple and hickory on the 14" WSM.
I just put it on, no therms, etc, and let it go, all vents open.
After about an hour the dome therm said 225, this slowly climbed to 300, then started back down again.
I added a few coals twice.
Here she is after 7 hours, no bone wiggle yet, so it went into foil for two more hours.
Rested for about 45 minutes, out of the foil and falling apart.
Rough pull:
Tender and moist as all get out.
I planned this for today's dinner, but we had to pig out on some last night.
